Mango Lime Jam


The tropical tastes of mango and lime married together in this decadent jam will delight the tastebuds and it's so gorgeous in the jars. Great for gift giving and a wonderful pick-me-up jam to brighten your day. Enjoy!


Mango Lime Jam
(adapted from Ball Complete Book of Home Preserving)

4 Cups finely chopped peeled mango
4 Tbsp lime juice from fresh limes
1 package (1.75 oz) regular powdered fruit pectin
5 1/2 cups granulated sugar
2 Tbsp lime zest
1/8 tsp butter

In a large nonreactive pot, combine mango and lime juice. Whisk in the pectin until dissolved. Bring to a boil stirring constantly. Add sugar all at once and return to a full rolling boil. Add the lime zest and butter. Boil hard for one minute. Allow jam to rest for three minutes before laddeling into jars.  Water bath process the jars for 10 minutes. Makes six to seven 8 oz jars.

Luckily I already cleaned my entire bedroom yesterday in a fit of cleanliness or maybe I was just temporarily insane. Anyway, I could use all the help I can get when it comes to cleaning my house. (Which I'm sure will please my husband) Here is a pic of my clean dresser! Very Feng Shui :-)
